Bakewell Tart


  • Jam 180g
  • Margarine 195g
  • Sugar 195g
  • Eggs 2
  • Flour- white 195g
  • Ground rice 195g
  • Baking powder 30g
  • Water- approx. 105ml
  • Almond essence- as required


  1. Make the pastry and block and portion or scale according to the tins required.
  2. Line the tins with pastry and decorate the edges.
  3. Spread with jam.
  4. Cream the margarine and sugar until light and fluffy. Add the eggs, flour, ground rice and baking powder, adding water as necessary to mix a soft dropping consistency.
  5. Spread evenly over the jam.
  6. Bake in a moderate oven for 35-40 minutes.
  7. Dredge with icing sugar before service.
